Madeleines

Many people refer to these as cookies but they are actually These tiny little french butter cakes. Whatever you call them they are delicious and only need a sprinkle of powdered sugar on top!

Ingredients:

2 large eggs

1/3 cup white sugar

3/4 tsp vanilla extract

1/2 cup all purpose flour

1/4 tsp salt

1/4 cup butter, melted and cooled

1/4 cup powdered sugar for sprinkling on top

Directions:

  1. Preheat oven to 375 degrees
  2. Butter and flour a madeleine cookie mold
  3. Whisk together dry ingredients – flour, salt and sugar and set aside
  4. In a small bowl beat the eggs with the vanilla until fluffy
  5. Gradually add sugar and continue to beat for about 5 min
  6. Fold in flour mixture, a little bit at a time
  7. Add lemon zest and pour melted butter around edge of batter
  8. Fold the melted butter into the batter
  9. Pour into your buttered madeleine mold
  10. Bake 15-18 min or until the little cakes are slightly golden on top
  11. Let cool, sprinkle with powdered sugar and ENJOY
