Chocolate Cream Filled Cookies

I set out to make chocolate cookies with cream filling but didn’t have any cocoa powder so I had to adapt this recipe and I ended up with chocolate chip cream filled. Here is the original recipe for the chocolate 🙂



  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup dark cocoa powder (Hershey brand is good)
  • 1 3/4 cups all-purpose flour


  • 2 1/2 cups powdered sugar
  • 3 ounces cream cheese softened
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt


For the cookies:

  • Preheat the oven to 375 degrees F
  • Line baking sheets with parchment paper
  • In a large mixing bowl, beat the butter and sugar together on medium speed, until smooth
  • Stir in the vanilla and salt
  • Mix in egg
  • Add the dark cocoa powder and mix on low speed
  • Add the flour, a little at a time, until the dough forms a ball
  • Roll out the dough between two sheets of parchment paper, to a thickness of 1/4-inch
  • Use a 2-inch diameter fluted round cutter to cut shapes, place on the prepared baking sheets, and bake for 9 to 12 minutes or until crisp around the edges and set in the centers.
  • Cool completely, and sandwich with filling.

For the filling:

  • In a large mixing bowl, beat the powdered sugar, cream cheese, vanilla, and salt together until smooth
