Peppermint Hot Chocolate Cookies

These taste just like a cup of hot cocoa!

1 cup butter, softened
1 cup sugar
1 large egg
1 teaspoon peppermint extract
2-1/3 cups all-purpose flour
1/3 cup baking cocoa
1 teaspoon salt
1 teaspoon baking soda
1 package (11-1/2 ounces) milk chocolate chips
1 cup marshmallow creme
1 cup finely crushed peppermint candies


  1. Line a baking sheeting with parchment paper and preheat oven to 375 degrees
  2. In a large mixing bowl cream together butter and sugar
  3. Whisk together the flour, cocoa powder, salt and baking soda
  4. Slowly add the dry ingredients to the butter and sugar mixture
  5. Drop by tablespoonfuls 2 in. apart onto baking sheets
  6. Bake at 375° for 10-12 minutes or until tops are cracked.
  7. Let cool
  8. Whiling cookies are cooling melt chocolate chips in microwave until smooth (make sure you stir the chocolate every 20-30 seconds)
  9. Drop a teaspoonful of marshmallow creme into the center of each cookie.
  10. Dip half of each cookie into melted chocolate; allow excess to drip off
  11. Immediately sprinkle with candies.
  12. Let dry
